Greg has been a member of the team at Doonbeg for over 6 years. Having relocated from Poland with his family he has enjoyed immense success in his career at Doonbeg.

Budzyn's creativity and inventive techniques are rooted in his belief in using local produce of exceptional quality. His trail blazing use of seasonal ingredients is evident throughout his carefully chosen menus. Greg produces a dining experience to remember.

Edmund joined The Lodge at Doonbeg in July 2011 following a number years spent in luxury hotels in Ireland. He is renowned for always being in good form, laughing and joking with guests and colleagues.

Edmund a graduate from Shannon College of Hotel Management (2001) has recently been appointed Food & Beverage Manager at The Lodge at Doonbeg.
